Simple and Fresh

As I posted a picture of a delicious Caprese Salad – I was asked many times over… how did you make it?

So many times, as in life, it’s simple… don’t over think it or over analyze it…

The salad is simple — the key — is FRESH!

I took two large organic heirloom tomatoes hand sliced them fairly thin — then I found some fresh Mozzarella from a Natural Grocery store — sliced it thin, but one must be careful too thin it will fall apart! Last, my favorite fresh herb! BASIL! I grow it year round in my house and in my garden. If you take the leaves and roll them, then slice them it creates a more elegant look.

As you can see in the picture, you just layer them around the outside of a plate. Spread your basil around it and last drizzle excellent grade olive oil and balsamic vinegar.

I love crispy bread with mine – so I took a baguette loaf, thickly sliced it and browned them or “fried” them per say in that great olive oil. The trick is to heat the frying pan add the oil just a thin layer. Place your sliced bread and watch carefully… Flip it over and brown the other side! Simple! and Fresh!

If you ingredients is fresh, colorful and simple – you can create super easy dinner dishes that please everyone! As you can see, I paired it with BBQ Pork Chops and grilled asparagus!
