Cooking For One?

Once Peter heads back on the road, I am left alone with the dogs to fend for myself! I always have folks tell me it’s hard to cook for just one, but I have an assistant I like to call “Chef Mic” (the microwave). He makes an awesome assistant and can help the single cook! I am not a fan of Chef Mic when cooking for a large crowd, but for heating up food he can make life a lot quicker!

I like lots of different veggies and bright colorful veggies! So pick and choose what veggies you like…I will go with brussel sprouts, broccoli, cauliflower, mushrooms, onions and potatoes. I don’t worry about technical steaming, grab a pot some about 1 inch of water in the bottom, cut the ends off your brussel sprouts, put them in as your water is coming to a boil. Because they are the most dense I start them first, let them get to boiling and about 4 minutes, then cut up your cauliflower and broccoli in a size you enjoy and add those on top of the Brussel sprouts. Cover and check to be sure all veggies are tender, drain your veggies.

Take the same pot, slice some onions and mushrooms, add butter or good good olive oil! Brown those and mix them in with your steamed veggies! Now remember, do enough for a week or a few days! Your choice! Cool them and put them in the fridge.

Here’s what I do for dinner! Use Chef Mic and cook a small potato about 3 minutes or until soft. Use a safe dish, and mash your potato roughly in the bottom of the dish or plate, then take a few big spoonfuls of our veggie mix! And I like to add a dollop of sour cream (which of course is homemade from the milk of my great milk cow Maybelle!) and spread it on top over your veggies, and then add a cheese of your flavor (once again Maybelle makes awesome cheddar!). Use Chef Mic again and heat thoroughly until cheese is just starting to melt! TADA!! Dinner for one!
